How does your family react when you get home from a long, trying day at work? I seem to get bombarded as I walk in the door with one question from everyone, “what's for dinner!” It's quite possible I'm only halfway through the door in all honestly, yes my family is usually hungry! ***sigh*** I know. The very last thing anyone wants to do after a long day is rush into the kitchen! However, feeding our family isn't necessarily optional, hello catch twenty-two… Thankfully for you, I just had one of those days. Now, here I am sharing this English muffin pizza recipe with you! Note to self, add this to your compilation of simple weeknight meal ideas, right?
I know for me, weekends are my time to shine! I can spend hours preparing delectable, healthy and mindblowing meals for my family. During the week, not so much! I tend to try to come up with the simplest, easiest, and least time-consuming meal choices that I have buried deep within my creative Mom brain. Afterall, all I really want to do is change into my sweatpants, sit on the couch, and catch up on my blogging affairs. Simple weeknight meal ideas are so valuable in my house, as I'm sure with many other Moms (or Dads) out there.
Which brings me to the simplest (and not all that expensive to prepare) homemade pepperoni pizza that I can offer you guys! Believe it or not, I've run into a small handful of people who have never heard of this tasty and completely customizable English Muffin Pizza Recipe! Forget about spending a fortune picking up a pizza on the way home from work. You can make this recipe for pennies on the dollar compared to what you'll spend at your local pizza house. Plus, it's completely customizable (I created a bonus pizza topping list to share with you, more on that later), it takes minutes to prepare, and everybody is going to love it!

***English Muffin Pizza Recipe***
Here's what you'll need:
6 – 12 –Whole English Muffins (depending on your family size, and preferences quantity may vary), here is a link for Amazon's options: http://amzn.to/2fpDQZZ
1 – 2 – 14-ounce jars of Pizza sauce (1 jar got me through 12-English Muffins, though we prefer light sauce. If you like heavier sauce on your pizza, getting 2 jars may not be a bad idea). Here's a link to the exact pizza sauce I use, you can get it from Amazon: http://amzn.to/2xxMtI4
2 – 4 Cups of Shredded Mozzarella Cheese (4-cups was just enough for a 12 whole English Muffin batch)

Pre-heat oven to 375 degrees (F)
Slice English muffins in half, if you have fork split English muffins, they're pretty easy to separate by hand.
Arrange on baking sheet, with center side up
Spoon Pizza Sauce on top of each individual English muffin, use as much or as little sauce as you prefer. We prefer light sauce, so I use about 2-tablespoons of sauce on each English muffin (give or take).
Add shredded mozzarella cheese on top of each sauce coated English muffin. Again, the amount will depend on your taste preference. Be sure to cover the English muffin evenly
Place pepperoni slices on top of each English muffin once you've finished with the sauce and shredded Mozzarella cheese. My family is pretty simple so we went with a basic, homemade pepperoni pizza, nothing fancy. If you want to go bold, now is your time to add any of your preferred toppings.
Bake in preheated oven for 8-14 minutes, or until cheese is completely melted and golden brown around the edges.
A couple of tips:
One of the best parts about this English Muffin Pizza Recipe is you can get creative and try new toppings! If you're not sure that you'll like a new topping but are feeling brave, you can prepare one single muffin with the new topping you'd like to try. This way, if you end up not liking it, you won't waste the entire batch and you'll know for future reference if the new topping choice is one you'll leave out next time. Or, repeat your new topping on more than one muffin! It's your choice.
If you prefer your pizza on the crunchier side, leave it in the oven a few minutes longer. Just be sure to keep a good eye on it to avoid burning.
If you prefer your pizza a bit softer or chewier, bake just until the cheese is melted, and it's heated through.
We prefer light sauce because I've noticed that getting too heavy on the sauce can cause the toppings to slide right off from the top. It also can cause the English muffin crust to get a little soggy. If you are a heavier sauce type of person, you may need to experiment a bit to find the perfect amount for your families taste preferences.
Let your kids make their own, if you're willing to let your kids try new toppings, I recommend letting them get creative on one muffin. Then, go with something you know they'll like on the other. This way, if they end up not liking their creation there's still something available to put in their belly after trying something new!
This simple weeknight meal idea I'm sharing with you is also leftover friendly! Be sure to store any leftovers in a ziplock bag or food storage container in your refrigerator. You can easily reheat the next day and enjoy an easy lunch! I recommend reheating in a toaster oven, or oven. The microwave works as well if you don't have access to either.
